Cherry Clafoutis – Vegetarian, Glutenfree

This is my favorite recipe using juicy fresh picked sweet cherries! Originally a French fruit dessert, the cherries are embedded in a batter and baked as a gratin in the oven. This is a quick and simple but oh so delicious recipe and can be enjoyed as a dessert or even for breakfast and brunch. I tweaked a few items to make it a more healthy and gluten-free but still delicious version.

My mother used to make cherry Clafoutis every year during cherry peak season and the taste and smell of it is still is one of my favorite childhood memories. Hello July, hello cherries, I love you!

Ingredients For 2 People:
2-3 big handfuls of cherries
2 eggs (organic, free range)
1/4 cup brown sugar
1/2 cup Oat flour (gluten-free brand)
½ cup milk (or almond milk, rice milk or raw milk etc)
butter for greasing

Instructions:
Turn on the oven and put heat to 350F.
Take a medium sized baking dish (7-9 inch) and grease with butter.
Wash the cherries and drain. With a knife, cut the cherries into halfs and remove the pits, adding the cherry halfs into the baking dish. Crack the eggs into a small bowl and whish until egg white and yolk are mixed well. Add the Oat flour and milk and whisk together until smoothe. Pour the batter over the cherries and shake gently to spread the batter evenly. Put the dish into the oven and bake for 20 min on the middle rack. Remove from oven and let cool for a couple of minutes.

Optional: dust with 1/2 teaspoon of powdered sugar to make it look even more pretty and yummy.

Cut into pieces, serve while still warm and enjoy every bite!
